Apple Cinnamon Muffins

Iced in this mornin' 
& decided to make some muffins for breakfast (:

Ingredients:
(Makes 12 muffins)
1 cup all-purpose flour
1/2 cup whole-wheat flour
2 teaspoons baking powder
1/4 teaspoon salt
1 teaspoon ground cinnamon
1/2 cup buttermilk
1/2 cup honey
2 large eggs
1 teaspoon pure vanilla extract
1/4 cup canola oil
2 cups peeled & chopped apples (about 2 large apples)

(Tip: If you don't have buttermilk, you can make it: place 1/2 cup milk less 1 1/2 teaspoons in a measuring cup & fill with less 1 1/2 teaspoons of white vinegar or lemon juice. Allow to sit for 5 minutes, then stir & add to the recipe)

Steps:

1.  Preheat the oven to 400 F & line muffin cups or grease the pan with cooking spray.

2.  In a medium bowl, whisk together the flours, baking powder, salt, & cinnamon.

3.  In a large bowl, whisk together the buttermilk, honey, eggs, vanilla, & oil.

4.  Stir the dry ingredients into the wet ingredients & mix until just combined.

5.  Fold in the apples.

6.  Pour the batter into the prepared muffin cups, filling 2/3 of the way.  Bake for 15 to 20 minutes, or until a toothpick inserted in the center comes out clean.

7.  Transfer to a wire rack to cool & enjoy.
